Erin Moore is a multi-disciplinary urban planner with focus on climate resiliency and food systems planning.
She is a graduate of the Masters of City and Metropolitan Planning Program at the Univeristy of Utah (2026), and a Bachelors of English from Westminster College (2017).

Salt Lake City’s Food Environment Map and Report

This project details Salt Lake City’s food environment, which is a term that describes what the food access in a certain area, and the factors that impact its availability—not just what food is available, but 
at what kinds of places, and by what means. The map was developed using ArcGIS Pro and transferred to online for web viewing. It details food access site types as points over a bivariant map, which crosses food access scores with housing density to determine how many people have more or less access to food. The food access scores were developed based on both criteria to do with the food offerings (freshenss, affordability, range of options, accessibility, seasonality, to name some) and their walkability from housing blocks. 

Combined with analysis of representative survey data, the map helps to create connections that validate observations from residents, like what they’re satisfied with or would like to see more of. It also reveals 
more about their shopping, cooking, and food production habits. Additional layers show opportunity zones where resources like urban agriculture sites or food retail could be located, and the subsequent report 
scans other city plans to identify places where other departments in the city are already aligned with food planning concerns. 

As a product of Salt Lake City’s Food Systems Program, the full report is not available to post as it is still in working draft form. Below is a one-page poster  analysis on one of the city’s districts to demonstrate
how the map was made and how it can be used as a tool by city council members to better understand their district’s food environments. The map also features planning area borders so that it can be used by 
other departments and divisions in the City that do neighborhood-scale planning to see where more food resources are needed, where connectivity for public transit and biking or walking is needed, and where 
underutilized spaces can be tapped for investment.








Wildfire Capacity Updates for Salt Lake City

University City and Metropolitan Planning Department for Salt Lake City  // 2026

Masters coursework that emphasized wildfire planning and prevention, especially concernign wildland urban interfaces. Salt Lake City was in the process of updating its adopted version of the 
State Wildland Urban Interface Code (WUI),  which was required by law to be adopted by all municipalities with properties in the WUI. It was also in the process of creating an updated Community Wildfire 
Preparedness Plan (CWPP). My class assisted with research on best practices for WUI ordinance amendments and CWPP development based on other cities in Utah 
and regions with comparable wildfire and wildland urban interface hazards.

Neighborhood Update Plan for the Avenues and Capitol Hill
University City and Metropolitan Planning Department for Salt Lake City  // 2025

Masters coursework that involved drafting an updated neighborhood plan for the Avenues and Capitol Hil neighborhoods in Salt Lake City. The sample plan was later presented to the
Salt Lake City Planning Division as a recommendation for their own plan development. We conducted neighborhood-wide surveys in-person and onlline, analyzed the data, and in groups
separated by topic, worked on each section of the plan—housing, businesses, green spaces, transportation, land use, and urban design. The bulk of my work was in the urban design group, 
where I was the team lead. At the end, I joined two other team leads in putting the full draft together for final submission.










Urban Design Recommendations for SLC Green Loop
2025

A literature-supported report that developed recommendations for developing the Salt Lake City Green Loop with the mental health benefits of greenways in mind. The Salt Lake City Green Loop
is a planned bikeway around the city, connecting the East and West sides of the city and the southern portion with the downtown core. Urban greening is a goal in SLC, which faces urban heat island
impacts due to the high desert climate and urban environment built out with unshaded concrete and aslphalt. While the physical benefits of cycling and urban greening are at the fore of most conversations 
about greenways, our work focused on understanding the benefits on mental health.   Case studies from other cities supported our research on the benefits of blue and green infrastructure as well as the
integration of design elements and landscaping that offer restoration and opportunities for social connection.
